Place the oyster cup down with the hinge facing towards you.
Hold the oyster down firmly with your hand, then press the point of the oyster knife firmly into the hinge and twist the knife. The upper
shell should pop open.
Cut the upper-abductor muscle by sliding the knife between the top of the shell and the meat.
Remove top shell.
Move the knife under the meat to cut the under-abductor muscle.
Once opened, the oysters should be placed on ice to keep cold or eaten!

When properly cared for, live oysters will keep for 10–21 days:
